My Dad loves pecan pie so I tried this recipe for him. They are really easy, but don't tell him!
PS He loves them!
1 cup packed brown sugar
1/2 cup flour
2 cups chopped pecans
2/3 cup butter, softened
2 eggs, beaten
Stir together brown sugar, flour & pecans.
In a separate bowl, beat the butter & eggs together.
Stir dry ingredients into wet, just until combined.
Spoon mixture into well greased muffin cups, about 2/3 full.
Bake at 350 for 12-14 minutes.
