Easy Lemon Bars

1 roll Pillsbury sugar cookie dough
4 eggs
1 1/2 cups sugar
2 tbsp flour
2 tbsp butter, softened
2 tbsp grated lemon peel
1/3 cup lemon juice

Break up cookie dough in an ungreased 13x9 dish. Using floured fingers, press into the bottom of the pan to form a crust. Bake at 350 for 20 minutes.

Beat eggs until well blended. Beat in sugar, flour & butter. Stir in lemon peel & lemon juice.

When crust is done, pour mixture over the hot crust. Return to oven for another 20-30 minutes, until light golden brown.

Allow to cool completely before cutting.
