Pecan Pie Muffins

1/2 cup flour
1 cup packed brown sugar
1 cup chopped pecans
2 eggs
11 tbsp butter, melted

Combine flour, brown sugar & pecans until well mixed.

In another bowl, beat eggs until foamy. Stir in melted butter.

Add egg mixture to flour mixture. Mix until moistened.

Line 9 muffin cups with paper liners. Also spray with cooking spray (or they will stick!).

Spoon mixture into muffin cups until almost full (they won't rise much)

Bake at 350 for about 25 minutes, until a toothpick inserted comes out clean.
