Cauliflower Lasagna

1 pkg ground turkey
1 tbsp minced garlic
1 tsp oregano
2 tbsp tomato paste
28oz can crushed tomatoes
1 cauliflower, cut into florets
vegetables of your choice (I used bell peppers & mushrooms)
1 cup ricotta cheese
2 cups mozzarella cheese

Add the cauliflower florets to boiling water and cook for 3 minutes. Drain and set aside.

Saute the vegetables and cook the meat. 

Combine the veggies (not cauliflower yet!) and meat then add garlic, oregano and tomato paste. Cook for a few minutes.

Stir in crushed tomatoes and simmer for 15 minutes.

In a big bowl, stir together the meat sauce and the cooked cauliflower.

Spread half the mixture into a 9x13 baking dish. Drop spoonfuls of half the ricotta over the top (a couple inches apart) and sprinkle with half of the mozzarella cheese. Add the rest of the mixture then top with the remaining cheeses. 

Bake at 375 for 30 minutes.
