Chorizo Egg Casserole

1 lb chorizo or soyrizo
3 cups frozen cubed has brown potatoes
1/2 cup diced onion
3/4 cup diced bell pepper
2 tbsp minced garlic
1 4oz can diced chiles
6 eggs
1 1/4 cup half & half cream
2 tsp chili powder
1 cup shredded cheese

Cook the chorizo/soyrizo and drain grease.

In another pan, cook the potatoes, onion, pepper, diced chiles and garlic until tender, about 10 minutes.

Remove vegetables from heat and stir in chorizo/soyrizo. Cool for 15 minutes.

Meanwhile, whisk together the eggs, cream and chili powder.

Grease an 11x17 baking dish. Add half the chorizo/soyrizo mixture, half the cheese, half the egg mixture. Repeat layers.

Bake uncovered at 350 for 35-40 minutes or until egg is set.
